Stuffed Capsicum

Treat your taste buds to these healthy yet delicious capsicums stuffed with mixed vegetables and soya granules

Ingredients: 

Capsicums medium sized 4-5,
soya granules 1/2 cup,
carrots diced 1/4 cup,
onion  finely chopped 1/4 cup
cabbage shredded 1/2 cup,
garlic finely chopped 1 tbsp,
red chilly powder 1 tsp,
turmeric 1/4 tsp,
                                                      coriander powder 1 tsp,
                                                      pav bhaji masala 1 tsp,
                                                      tomato 1 small finely chopped
                                                      potato 1 small boiled and mashed
                                                      oil 1 tbsp,
                                                      shredded cheese 2-3 tbsp

Method:

1. Wash the capsicums, cut the top to remove the skin and seeds to form a cavity.
2. Heat oil in a wok, add garlic , onions and saute till onions turn translucent.
3. Add other vegetables except potato and cook for 2-3 mins.
4. Add soya granules and 1/2 cup water.
5. Add turmeric, coriander powder, chilly powder, pav bhaji masala.j and salt.
6. Cover and cook for 5 mins
7. Add mashed potato and mix thoroughly.Let the mixture cool.
8.Fill the mixture in the capsicums. top up with grated cheese.
9. Grease a microwave safe vessel with oil and microwave the stuffed capsicums at 100% power for 7 mins.
10. Once the capsicums are cooked, cook them on a tava till they turn slightly crispy and golden brown.
11. Serve hot with roti or paranthas.
