Butter Chicken

Tender chicken perfectly grilled and cooked in butter is an ideal bet for a royal lunch treat. Don't forget to workout after indulging into this :)


Serves: 4 

Ingredients:
Boneless Chicken 800 gms






For Marinade:

Hung Yogurt 1 cup,
Ginger-Garlic paste  1 tsp,
Garam masala 0.5 tsp,
Lemon Juice 2 tbsp,
Mustard Oil 2 tbsp

For the Gravy

Butter 50 gms,
Ginger-Garlic paste 0.5 tsp,
Red Chilly powder 2 tbsp,
Tomato Puree: 3-4 tbsp,
Honey: 2 tbsp,
Fresh Cream 0.5 cup
Kasuri Methi 0.5 tbsp,
Whole garam masala 1 tbsp
Onions 3-4 medium sized
Kashmiri Red Chilly Powder 1 tbsp
Cashew nuts 9-10 ground into smooth paste
Salt to taste

Method:

1. Make incisions with a sharp knife on the chicken pieces. Apply mixture of red chilly powder, lemon juice and salt. set aside for half an hour.
2. Add hung yogurt, salt,ginger garlic paste, garam masala and mustard oil to the above mixture and allow it to marinate overnight.
3. Put the chicken pieces on skewers and cook in moderately hot tandoor or preheated oven for 10-12 minutes. baste with butter and cook for another 2 minutes.
4. Heat 1 tbsp oil in a pan. Add chopped onions and fry them till tey turn golden brown. Grind them to form a soft paste.
5. Heat butter in a pan. Add whole garam masala (Green cardamons, cloves,peppercorns and cinnamon) Saute for 2 mins.
6. Add ginger garlic paste. Cook for 2 mins.Add onion paste. Saute till butter separates.
7. Add tomato puree, red chilli powder, garam masala, salt and 1 cup of water. Bring to boil. 
8. Simmer for 10 mins on medium flame. 
9. Add Kasuri methi, Honey and grilled chicken.
10. Top up with fresh cream. Garnish with fresh fine chopped coriander.
11. Serve hot with Naan or Tandoori Roti.
