Oatmeal Cookies

Loaded with the goodness of oats these crunchy cookies are a perfect complement to your evening tea.





Ingredients:

1 1/4 cups all purpose flour,
3/4 cup butter,
3/4 cup castor sugar,
3/4 cup brown sugar,
2 eggs,
1 tsp vanilla extract,
1 tsp baking powder, 
3/4 tsp cinnamon powder,
3/4 tsp nutmeg powder,
2 3/4 cups oats,
2 tbsp raisins,
chocolate chips (optional)

Method:

1. Blend together butter, brown sugar,castor sugar together until smooth and creamy.
2. beat in the eggs and vanilla extract, Fold in flour,baking soda,cinnamon and salt.
3. Add Raisins, oats, chocolate chips.
4. Refrigerate for an hour. 
5. Roll into small balls. Flatten them and place onto the greased baking tray.
6. Preheat the oven to 180 degree C and bake for 20-25 mins until golden brown. 
7. Cool slightly and remove from the baking tray. Cool completely and store in airtight jars.
