Mango Cheese Cake

Soft Smooth Cheese cake laden with goodness of alphonso mangoes!!




















Ingredients:
 
Alphonso Mango 1 Piece,
Whipping Cream 200gms,
Cheese Spread or cream cheese 2 tbsp.,
Plain vanilla cake 100 gms.,
Gelatin 12 gms,
Sugar 2 tbsp.

 Method:

1. Soak gelatin with 1/4 cup of water for 3-4 minutes. Then melt it on low flame or double boiling process.
2. Beat whipped cream until done.
3. Add Cheese spread and gelatin to it.
4. Divide the mango into two equal portions. Blend one part in the mixer into smooth pulp. Chop the other half into small pieces.
5. Add 2 tbsp. of mango pulp and the pieces to the Whipped cream mixture.

To assemble:

1. On the cake board, place the ring, set the layer of vanilla cake as required and set it in freezer doe 15-20 minutes.
2. Pour the Whipped cream mixture and allow to set for 30 minutes.
3. Heat the remaining mango pulp with sugar for 2 minutes. Cool it and pour over the whipped cream mixture layer.
4. Cut and serve cold.
