Chicken Biryani

Delicately flavored, all time favorite dish simplified. 

Ingredients:

Basmati Rice 3-3.5 cups,
Chicken 600-700 gm,
Onions 1-2 medium fried,
Onions 6-7 sliced,
Onion 1 finely chopped,
Coconut powder 2-3 tsp,
Cumin seeds 1-2 tsp,
Cinnamon 1-2 sticks,
Ginger garlic paste 2 tsp,
turmeric 2 tsp,
Garam masala 3 tsp,
chilly powder 4-5 tsp,
hung curd 1 cup,
lemon juice 2 tsp,
Coriander,mint to garnish,
salt to taste,
mustard oil 1 tsp,
oil 4-5 tbsp,
ghee 1-2 tsp

Method:

Marination:
Make incisions with a sharp knife on the chicken pieces. Apply lemon juice,curd,mustard oil,1 tsp ginger garlic paste, 1 tsp chilly powder and turmeric. Keep it overnight to marinate.

To cook Chicken:
Heat oil in a wok. Add 1 chopped onion, 1 tsp ginger garlic paste and cinnamon sticks. Add Chicken, 2 cups of water. Cover and cook for 15 mins. Separate cooked chicken from the broth. This broth will be used to cook rice.

To cook rice:
Add the broth,salt,cumin seeds to the rice. Fry for 2 mins. Add water twice the amount of rice and cook till the rice is partially cooked.

For the Biryani Masala:
Heat oil, add sliced onions,coconut powder,1 tsp turmeric powder, chilly powder,Garam masala and salt. Roast till oil separates. Add chicken and saute. Add ghee for taste.

Grease a thick bottomed pan with oil Spread some rice at the bottom. Add chicken on top. Add rice again. Repeat. Cook on low flame for 10-15 mins.
Garnish with fried onions, chopped mint and coriander and a dash of lemon.
Serve hot with Raita.
