Broccoli Walnut Soup

Add more calcium to your bones with this refreshing soup  

Ingredients:

2 cups chopped broccoli boiled,
1/4 cup chopped onions,
1/4 cup boiled potatoes,
2 tsp cornflour dissolved in 1 cup milk,
1 tbsp oil,
Salt and black pepper to taste
1/4th cup chopped walnuts to garnish

Method:

1.Heat oil in a non-stick pan and saute the onions on medium flame for 1 min.
2. Add broccoli, mix well and saute for another 2-3 mins. 
3. Add 2.5 cups of water and cook for 4-5 mins. 
4. Allow it to cool and blend blend in a mixer along with the potatoes to form a smooth puree.
5. Transfer the puree into a deep pan. Add milk,salt, pepper. Mix well and bring to boil.
6. Garnish with walnuts and serve hot.

Note: Retain the water used to boil broccoli and add it in required quantity to the soup to preserve taste and nutrition.
