Carrot Beetroot Soup

Serves: 4

Ingredients:

1.5 large sized beetroot,
4 large sized carrots,
1 tsp garlic paste,
1 tsp ginger paste,
3 large onions diced,
1 tsp green chilly finely chopped,
1/2 tsp cumin powder,
1/2 tsp coriander powder,
Salt to taste,
3 cups water or vegetable stock

Method:

1. Peel off the carrot and beetroot skin & cut them into big pieces.
2. Pressure cook beetroot and carrot.Drain and reserve the water after pressure cooking.
3.Saute diced onions in a tbsp of oil till they turn golden brown.
4. Cool the carrot and beetroot pieces, chop them into smaller pieces and grind them in a mixer        along-with the sauteed onions to form a smooth paste.
5.Strain the paste.
6. Add vegetable stock or 3 cups of water to the strain and place it on medium flame.
7. Add garlic,ginger,green chilly,cumin and coriander powder.
8. bring to a boil,let it simmer for a few minutes.
9. Serve steaming hot in soup bowls.
